Cinco De Mayo Key Lime Cupcakes

For Cinco De Mayo I made these cupcakes for work: they were a hit!


Supplies:
Any flavor cake or cupcake mix- or you could create your own..I did not have the time
1 Lemon Key Limes
Mixer (not mandatory)
Frosting bag (not mandatory)
Zester
Lemoncello Liquor
3 C. sifted Powered Sugar
1/2 C. cream cheese (whipped is best- or room temp.)
Green Food Coloring

Cupcake Pan
Cupcake liner cups

Directions:
Place powered sugar in mixer (or mixing bowl). Make 1 teaspoon of lemon zest and 1 teaspoon of lime zest. Add 5-6 tablespoons of lime juice. Mix in 1 teaspoon of Lemoncello Liquor and 1 drop of green food coloring..if you put too much it will look "christmas green". If frosting is too runny you can add some canned vanilla frosting. Mix cake mix following directions on the box. Bake and then cool. Using spoon or spatula place in frosting bag (or use ziplock bag and cut the corner). Decorate cupcakes using whatever frosting tip you prefer. Finally thinly slice the last lime into wheels and cut through half way so you can twist them as seen in the picture. Enjoy!

DIY: Calming Glitter Jar

Calming Bottle Instagram Post I saw a great idea on Pinterest a while ago about calming glitter jars being used in the classroom. I have not used it in the classroom yet, but here's what I'm thinking... Students who are upset (not violently) can go to an area of the classroom away from the other students. The area can have a stuffed animal, journal, timer, stress ball, and or the calming jar. I looked around my house for a jar or container that had a flat top so it could be turned over and low and behold I found the Starbucks iced coffee bottle.
